Veggie Rolls

A couple of years ago, I went to visit my cousin in Texas.  My aunt made this veggie mixture for us and I've been making it ever since.  I've never had anything like it before and it's unlike anything I can describe - other than that it's delicious.

She served it on hotdog buns with mustard.  Sold.

Basically, it's a bunch of chopped up vegetables mixed with cheese and creamy Italian dressing.

Even guys love this stuff.

The only thing you have to cook is the cauliflower - just steam it until tender.


And then chop it up super fine


And then get the rest of this stuff out and start chopping it, too


Radishes.  You can grate them or chop them into little bitty chunks.


Green pepper.  Chopped fine.


Canned green beans, chopped fine.  Sounds weird.  Tastes good.


Carrots, grated while sister supervised.


And a few other things I forgot to photo....green onions, sweet pickle relish, and shredded jack cheese.


Now for the dressing.  Because life is all about the dressing. You can either mix these two things together to create your own creamy Italian:


Or you can use a bottle of Creamy Italian Dressing.  Your call.  Both are good.


Just don't forget to stir it well.


And put it on hotdog buns with either yellow mustard or Dijon mustard.


This stuff is better than you can believe.  Crunchy, tangy, tart and sweet all at once!  It's like a party in your mouth.

Veggie Rolls
1 1/4 cup cauliflower, sliced
1/4 cup chopped green onions
3/4 cup grated carrots
1/2 cup sweet relish
1/2 cup finely chopped cooked green beans
1/4 cup radishes, grated or finely chopped
1 green bell pepper, finely chopped
1 cup Monterey Jack cheese, grated

Dressing:
1/2 cup mayonnaise
1/2 cup Italian dressing
OR
1 cup creamy Italian dressing

Steam the cauliflower by placing it in a microwave bowl with a small amount of water.  Cover with plastic wrap and cook for about 5 minutes, or until the cauliflower is tender when pierced with a fork.  Allow the cauliflower to cool and finely chop it.

Mix all the vegetables together with the cheese.  Whisk the dressing together and toss with the veggie salad.  Chill.

Serve on hotdog buns with Dijon or yellow mustard.
