Sausage, Green Beans, and Potatoes

I tried to come up with a clever, catchy name for this recipe.

But I just couldn't.

Sorry.

I have two things to say about this recipe: first, this is so good, you really won't believe it.  It's better than you think it looks.  It's better than you think it sounds.  My kids scarf it down, my husband loves it, and even though I always tell myself I'm not going to eat any, I always end up eating it because it's just that good.

Second, this is proof that we do eat more than just chicken for dinner around here.

It's a cinch to put together.  And cornbread must accompany it. 
All we're doing is layering the three ingredients into a pot and simmering until the potatoes are done.

See?  Simple.

Take a pound of beef smoked sausage and slice it up.







Lay the slices in the bottom of a large pot. 

Beef smoked sausage is so flavorful it's ridiculous.  If you've never had it, you're missing out. 

Don't miss out.  Make this recipe.


Now take a pound of potatoes and cut them into pieces.

And layer the potatoes on top of the sausage.


And now, open a big can of green beans

and pour them, juice and all, over the potatoes and sausage.

Sprinkle in some salt and pepper.

Cover the pot and simmer for about 30-40 minutes until the potatoes are done.

I'm telling you, kids love this meal.  And so do mommies and daddies.

While it cooks, whip up some cornbread.  Jiffy is great.  Homemade is even better.  I'll show you our favorite homemade cornbread next week.

In the meantime, put beef smoked sausage on your grocery list.













Sausage, Green Beans, and Potatoes

1 lb. Beef smoked sausage, sliced
1 lb. Yukon gold potatoes, cut into chunks
28 oz. can green beans
1/2 tsp salt
1/2 tsp pepper

In a large pot, layer the sausage on the bottom.  Next layer the potatoes on top of the sausage.  Pour the can of green beans, juice and all, on top.  Sprinkle with salt and pepper.  Cover the pot and simmer for 30-40 minutes or until the potatoes are tender when you poke them with a fork.

Serve immediately with cornbread.

Oh yum! I will have this tomorrow night for dinner. Simple and delicious- my type of food. When I read your blogs, I always remember recipes that I have that are similar. This one reminded me of a similar stoup that I make with cabbage and fresh green beans. It cooks for several hours for that long-cooked taste. I'm slobbering just thinking about it. I don't make it very often because the hubby doesn't groove on cabbage, but this might be a replacement that he will groove on.

We made this one too and really liked it (it's SO easy!). We made it with the Allen's "flat" green beans and it was just great.
