Tomato and Blue Cheese Sandwiches


Growing up, we never ate BLTs. 


But we always ate bacon & tomato sandwiches. 



My family took the position that lettuce just got in the way.



When I married my husband, though, he looked utterly confused when I served him a bacon & tomato sandwich.


He wanted to know where the lettuce was.


Bless his heart.

So here you go.  Here's how we eat tomato sandwiches: with blue cheese dressing instead of mayo.

Tomato and Blue Cheese Sandwiches

For each sandwich:

2 thin slices fresh tomato
Spread of Blue Cheese Dressing
2 slices of fresh bread

Spread the bread with the dressing.  Pile on the tomato slices.  Devour.
