Fresh Pico

Tomatoes are in.

Now, what to do with them?

Why, make pico, of course.

Right. now.

It doesn't get much better than pico de gallo made with tomatoes you just picked.

Seriously.

This isn't really even a recipe.

I just toss together some onions, tomatoes, cilantro, lime juice and season it with salt, pepper and sugar and - voila! - fresh pico.  We put it on top of fajitas.


Just make sure you're super neat while you're chopping tomatoes.


I mean, this step is important.

If only I could figure out how to grow a lime tree in Kentucky, we'd be in business.

Fresh Pico

1 small sweet onion, chopped small
5 ripe tomatoes, chopped small
1 bunch cilantro, minced
Juice of 2 limes
1 tsp salt
1/2 tsp pepper
2 tsp sugar

Toss all ingredients together.  Serve immediately at room temperature or chill before serving.  Serve with tortilla chips, or basically anything.

This is best eaten the day it is made.
